I moved back to Vermont late fall 2007- from the hot desert of Arizona and I have to say it was difficult and I was VERY cold acclimating to my home state of Vermont cold winters.Capture MENOPOT

It is true, that blood does thin when living in a warmer climate. Also I remember I was on the ‘lean side of body fat’ and thought perhaps adding a couple of pounds may actually insulate my body better and so I allowed myself to gain weight. And did it help me stay warmer? It did! BUT WHAT A BAD MOVE! What I realize as I look back is that was also the onset of peri-menopause and the beginning of a hormonal shift that would result in body fat in places I had never had before. Those pounds I gained that winter in 2007-2008 slowly continued to grow until 2015, now POST- menopause….and the results was I had put on a whopping 14 pounds of flab around the belly (meno-pot) and back!

Many people are more active in the spring, summer and fall and find they hibernate a little more when the climate drops and the snow falls…but this year I am going to defy those odds. Now that I have discovered something to keep my body burning whether I am actively burning calories from activity or not I will not gain weight this winter- in fact I am going to continue dropping unwanted pounds of excess body fat. What Did We Eat?

POST Ketopia the following is a typical day of what we ate. We continued to exercise approximately 30 minutes per day and kept well-hydrated with water!

Before Breakfast: (coffee time!)

We began having bullet proof coffee. This is coffee where you add a Tbs. of unsalted grass fed organic butter and high oxtane oil TO your coffee and blend. If you are thinking this sounds crazy then you are not alone- but it IS delicious and a meal unto itself as it is very satisfying and gives you instant brain power! When I first heard of this I thought it would taste horrible…but I was wrong.

A Typical Breakfast: 2-3 eggs, bacon (optional) couple of olives, slice of avocados and slice of cheese (note the high fat choices)

A Typical Lunch: FIXX or Thunder Shake (www.JoysFavorites.com) 1/2 cup of unsweetened almond milk, 1/2 cup water, 2 Tbs. heavy cream, 1/4 avocado and blend! (I also add 1 drop of peppermint essential oil to mine so it has a peppermint patty flavor!)

Snacks throughout the Day: Cheese stick or slice of cheese, celery with almond butter or lettuce wrap with feta cheese, black olives and dab of pesto, nuts.

A Typical Dinner: Small piece of chicken or fish on the grill or grass fed organic hamburger. Leafy green salad with blue cheese, feta cheese, celery, avocado and black olives- oils and salad dressing (zero sugar and carbs). Occasional steam veggies or zucchini on the grill.

Believe it or not, we are never hungry eating this way and are both surprised and delighted that our clothes continue to get looser. jeans

I can only answer this from MY experience! I found that adhering to the 10-Day Ketopia program was very easy. I didn’t have any cravings or hunger and my energy was high. Some people experience a little discomfort in the first couple of days due to detox (also known as Keto-Flu) but I did not have any discomfort whatsoever!

Is is Difficult to Travel when you are using KETOPIA?

This is a question that I have been asked and I’d like to offer MY experience.

First of all, I have found that using the Ketopia 10-Day Reset pack incredibly EASY- SIMPLE and CONVENIENT!!!! For me- it is easy and a preferred program to travel with as it is very portable and easy to consume in any imaginable situation- whether driving, eating in a hotel room, in an airport or on an airplane. Also because it is filling and satisfying, you’ll be able to over look the crappy non-food options that you may have succumbed to in the past when little else was available. Also as long as you stay hydrated, you ought to be able to continue your program with the same success as while you are in the convenience of your home. Your only meal you’ll have to find while traveling is your dinner meal and we find it very easy finding restaurants where you can get a large salad and protein of your choice. (choose from baked, broiled or grilled)

Having said this- I would limit going out and traveling the first time you do the 10-Day Reset as you will want to be 100% compliant with all suggested foods and the times that are most optimal for eating them! We find it easier to do this in your home environment as you become acclimated to the foods/timing of the foods and preparation. Ketopia visual now

Of course- like anything else, you want to be dedicated to your results and committed to the program as there may be foods available that are tempting- that you simply do not have available in your home environment. not on a dietI am sitting in the airport as I write this and heading home after a 6 day trip to NC finding our perfect winter get-away ocean home. Although we enjoyed the majority of our meals on the go- using KetonX in the morning, Dough Bites late morning (Also a great snack to ward off any cravings or hunger!) and FIXX for our afternoon meal- (simply add to cold water in a shaker and enjoy!) we did enjoy some southern meals in local Seafood restaurants. I enjoyed foods NOT keto friendly, but since I have successfully RESET my body using Ketopia on 3 occasions (30 Days straight) my body really does adjust nicely and with ease. Foods I had never tried and enjoyed were: a Fried Soft Shell Crab, Jambalaya, jambalayafried green tomatoes, and get this…shrimp grits!

cobb saladKeto Cobb Salad

1 c. ham
4 cherry tomatoes
¼ c. bleu cheese
2 eggs, hard boiled
2 c. romaine lettuce, coarsely chopped
½ avocado, diced
2 slices turkey bacon

Keto Cobb Salad Dressing
1 T. olive oil
1 T. organic apple cider vinegar
1 t. lemon juice
1 t. Dijon mustard
1 clove garlic, crushed (optional)
Salt and pepper, to taste
Mix dressing and salad ingredients separately. Pour dressing over salad and enjoy.

KETO FOOD PYRAMID

Keto Steak
2 4-oz. sirloin steaks, cut into strips
1 T. coconut oil
1 small onion, diced
1 clove garlic, crushed
2 small tomatoes, diced
1 t. ground ginger
4 T. apple cider vinegar
Salt and pepper, to taste
Pour oil into a large skillet. Brown steaks on both sides over medium-high heat. When both sides are browned very well, add onion, garlic, and tomatoes. In a separate bowl, stir together ginger, salt, pepper, and vinegar. Add vinegar mix to skillet and stir. Cover skillet and reduce heat to low. Simmer until liquid evaporates completely and serve.

Keto Ground Turkey
1 c. ground turkey
½ c. sliced spinach
3 T. red pepper
¼ c. part skim mozzarella cheese
½ t. fresh basil (optional)
2 T. red onion, chopped
1 t. butter
Salt and pepper, to taste
Brown turkey in butter over medium-high heat. Add remainder of ingredients. Reduce heat to low. Cook until onions are soft, stirring occasionally. Serve.

Cheese and Onion Quiche
5-6 c. Muenster or Colby jack cheese, shredded and divided in half
2 T. butter, plus more for greasing pans
1 large white onion, finely chopped
12 large eggs
2 c. heavy cream
1 t. salt
1 t. ground black pepper
2 t. dried thyme
Preheat oven to 350 degrees. In a skillet, melt butter over medium-low heat. Add vegetables and sauté until onions are translucent and soft. Remove from heat and cool. Butter two 10-inch quiche pans or deep pie pans. Put half of the shredded cheese in the bottom of each buttered pan. Add half of the cooled vegetable mixture to each pan in an even layer over the cheese.
Crack eggs into a large mixing bowl. Add cream and spices, then whisk together until well mixed and frothy. Pour half the mixture over each pan of vegetables and cheese, and use a fork to gently and evenly distribute cheese and vegetables into egg mixture. Slide quiche pans into the oven, leaving an inch of space between the pans. Bake for 20 to 25 minutes, or until set, puffy and slightly golden in the center. Quiches are done if you insert a knife into the center and it comes out clean. Cut each quiche into six equal sized servings. Serve immediately, or let cool and refrigerate or freeze. These will keep in the freezer for two weeks, or the refrigerator for one week.

Keto Omelet

omelette3 eggs
2 T. almond milk (can substitute cream or coconut milk)
1 plum tomato, diced
1/4 c. shredded spinach
1 T. purple onion, diced
1 pinch basil
Garlic (optional)
1 t. coconut oil
In a mixing bowl, beat eggs with almond milk. Add other ingredients. Warm coconut oil in skillet over medium-low heat. Pour egg mixture into skillet and cook until eggs are cooked, flipping half-way through.

Keto Frittata
1 T coconut oil
4 eggs
1 ¼ c. fatty ground beef, turkey, pork, chicken or bacon
½ green pepper, diced
½ red pepper, diced
3 leaves kale
4 mushrooms
1 c. goat cheese
1 T. curry powder
1 T. paprika
1 T. garlic powder
Cut the kale, mushrooms, green pepper and red pepper into small pieces. Heat coconut oil in a pan over medium-low heat. Add vegetable mixture and sauté until soft. Add ground beef (or other meat) and stir until browned. In a separate bowl, beat eggs, curry powder, paprika and garlic powder together. Spread the vegetable mixture evenly across the pan. Pour the egg mixture evenly over the vegetables. Sprinkle goat cheese on top. Cover and cook until eggs are cooked and cheese is bubbling (3-5 minutes).

Quick Avocado Salad
½ avocado, diced
1 small head crunchy lettuce, shredded
2 eggs, hard boiled and sliced
1 medium spring onion, chopped
1 splash lemon juice
1 pinch pink Himalayan salt
1 T. extra virgin olive oil
Mix all ingredients and enjoy.

Keto Meat Loaf
1 lb. lean ground beef
2 eggs
1 t. garlic powder
2 t. Mrs. Dash seasoning
1 t. Italian seasoning
1 T. cream
½ c. water
Mix all ingredients and place in baking dish. Bake at 350 degrees for 45 minutes. Garnish with a small amount of ketchup, but be mindful of added sugars.
Egg Muffins
8 eggs
½ c. hard cheese, shredded
½ c. spinach, chopped
1 t. oregano
1 t. basil
1 T. garlic
Pepper, to taste
Crack eggs into medium mixing bowl. Mix in all other ingredients and pour into muffin pan. Bake at 500 degrees for 10 to 15 minutes, or until cooked all the way through.

I grew up in the FAT PHOBIC era and steered away from eating foods with a high fat content- EVEN good healthy fats like what avocados and olives provide. This was the same era when packaged foods became popular and everything FAT-FREE became a popular choice.
